BARBECUED BEAR
3 lb. bear roast
Salt & pepper
1 clove garlic
2 tbsp. brown sugar
1 tbsp. paprika
1 tsp. dry mustard
1/4 tsp. chili powder
1/8 tsp. cayenne pepper
2 tbsp. Worcestershire sauce
1/4 c. vinegar
1 c. tomato juice
1/4 c. catsup
1/2 c. water
Place meat into a small roaster. Season the meat with salt, pepper and garlic. Roast at 350 for at least an hour. Check for doneness. When cooked, slice thin. Mix 1 teaspoon salt with remaining ingredients in a heavy skillet. Simmer 15 minutes then add the meat. Continue simmering for 1 hour or until meat is tender.
